In a semi-automatic machine, you control grind size, dose weight, and extraction time manually — you can compensate for a difficult bean by adjusting your technique. In a super-automatic, the machine controls those variables within a fixed range. The bean you put in has a disproportionate effect on the outcome.
The internal grinder has a limited adjustment range. The brew group runs at preset pressure. Extraction time is automated. Put in beans that fall outside the machine's operating assumptions and you'll get shots the machine can't compensate for, regardless of how you configure the menu options.
The good news: super-automatics are calibrated for a specific bean profile, and once you know what that profile is, finding good beans is straightforward.
Roast level affects bean density, oil content, and how easily the bean fractures under the grinder's burrs. Super-automatic grinders are calibrated for medium to medium-dark roast beans. Here's how each level performs in practice:
Denser than darker roasts. Requires a finer grind that most built-in burrs can't produce without choking the machine. Output tends to be sour and under-extracted.
The sweet spot for most machines. Balanced density and oil content. Produces clean, well-extracted shots with good crema and complexity.
Works well across all super-automatics. Slightly more oil than medium — grind a touch coarser if your machine allows. Rich flavor, dense crema.
High oil content coats grinder burrs over extended use. Fine for occasional use; not ideal as a daily bean in a super-automatic.
Super-automatic machines are built around the fresh-grind-per-shot model. The grinder, brew group, and extraction cycle are all designed to work with beans ground immediately before brewing.
Most machines do include a bypass doser — a separate chute that accepts pre-ground coffee, bypassing the grinder. It's there for decaf or specialty beans where you only want an occasional shot without loading the hopper. Using it as a regular practice produces noticeably less consistent results because pre-ground coffee loses volatile aromatics within minutes of grinding.
Buy whole beans. Grind fresh, per shot. That's what these machines are designed for.
Most espresso blends are designed specifically for espresso extraction — the roaster has calibrated the blend to perform well under high pressure and produce balanced flavor across a range of grind settings. This makes blends more forgiving in a super-automatic.
Single-origin beans can produce outstanding espresso, but they're more likely to be roasted lighter to preserve origin character, which can create extraction problems in super-automatics. If you want to use single origins, look specifically for ones labeled "espresso roast" or "recommended for espresso" — these are roasted to work under the pressures involved in espresso extraction.
A practical starting point: Start with an espresso blend from a reputable specialty roaster in the medium to medium-dark range. Once you understand how your machine behaves with that as a baseline, experiment with single origins from there.
Coffee packaging almost always shows a best-by date — typically 12–18 months from roast. That date reflects shelf stability, not flavor peak. For espresso, freshness is measured in weeks, not months.

Look for the roast date on the bag, not the best-by date. Buy in quantities you'll use within 3–4 weeks of opening. Store in an airtight container at room temperature — not in the freezer, which introduces moisture during thawing that degrades the bean.
Oil is a natural byproduct of roasting — the darker the roast, the more oil migrates to the surface of the bean. A light sheen is normal. Heavily oily beans (the surface looks wet and slick) present a specific problem in super-automatics: oil accumulates on the internal burrs and in the bean hopper, eventually becoming rancid and affecting flavor.
If you prefer dark roasts, use them in rotation with a drier bean and clean the grinder channel more frequently. Most De'Longhi machines allow you to run a grinder cleaning cycle through the menu.
⚠️ Never use flavored coffee beans in a super-automatic. Flavored beans use synthetic oils and flavor compounds that coat grinder burrs and internal pathways. These residues are nearly impossible to remove completely, contaminate subsequent shots for days, and accelerate wear on internal components.
Different beans grind differently — even at the same roast level. Density, moisture content, and age all affect how the bean fractures under the burrs. When you switch to a new bag, your previous grinder setting may no longer be optimal.
Adjust one step at a time and evaluate the result. The general rule: if the shot is sour or under-extracted, grind finer. If the shot is bitter or takes too long to dispense, grind coarser. Most users find a setting that works for their preferred bean and rarely need to change it again.
