How to Make Espresso at Home
What You Need
Espresso is a pressurized extraction — the machine forces hot water through a compacted puck of ground coffee at 9 bars of pressure. That physics cannot be replicated without a pump-driven machine. Beyond the machine itself, the process depends on a small set of tools:
- Espresso machine — pump-driven, 9-bar minimum. Semi-automatic machines give you the most control over each variable; super-automatics handle most steps automatically.
- Burr grinder — produces consistent particle size, which is the foundation of even extraction. Blade grinders produce uneven particles that extract inconsistently and cannot be dialed in reliably.
- Digital scale — measures dose (ground coffee going in) and yield (liquid espresso coming out) by weight. Eyeballing volume introduces the main source of shot-to-shot inconsistency.
- Tamper — compresses the ground coffee into a level puck before locking the portafilter into the machine. Most machines include one; aftermarket tampers with a calibrated handle simplify the pressure variable.
- Fresh beans — within 3–4 weeks of roast date, stored in an airtight container. Stale coffee produces flat, lifeless shots regardless of technique.
Step 1 — Grind and Dose
Espresso requires a fine grind — finer than drip, coarser than Turkish coffee. The particle size determines how much resistance the water meets as it passes through the puck; too coarse and water flows too fast, too fine and it stalls. A useful reference: espresso grind should feel like fine table salt, not powder.
The standard dose for a double shot is 18g of ground coffee, though doses from 16g to 20g are common depending on the basket size and the beans. Weigh the dose before grinding — consistency here makes calibration meaningful. Distribute the grounds evenly in the portafilter basket before tamping; uneven distribution creates channels where water takes the path of least resistance and extracts unevenly.
Burr grinder adjustment: Start at the manufacturer's recommended espresso setting and adjust one step at a time. Pull two to three shots before evaluating a change — the first shot after a grind adjustment is often inconsistent as residual grounds from the previous setting clear the burrs.
Step 2 — Tamp
Tamping compresses the ground coffee into a uniform puck that water must pass through evenly. The goal is a level, firm surface — not maximum force. Approximately 30 lbs of pressure is the commonly cited standard, but the more important variable is consistency and levelness. A tamp that applies uneven pressure across the puck creates high and low density zones, which produce channeling: water finds the looser path, extracts that area heavily while leaving the rest under-extracted.
Stand directly above the portafilter when tamping. Keep the wrist straight. Apply firm downward pressure until resistance is felt, then hold briefly. Rotate the tamper slightly to polish the puck surface, which reduces edge cracks. Lock the portafilter into the group head immediately after tamping — exposure to air dries the surface and can affect extraction.
Step 3 — Extract
Lock the portafilter into the group head and start the extraction. A well-calibrated double shot flows for 25–30 seconds from first drop to reaching the target yield of approximately 36g. This 1:2 ratio (18g dose producing 36g of liquid) is the standard starting point — it balances sweetness, acidity, and body for most beans and roast levels.
Watch the extraction as it flows. The first few seconds produce a slow, honey-thick stream of dark concentrated espresso — this is the heart of the shot. The flow should gradually lighten in color. If the stream turns thin and pale before the shot reaches 30 seconds, stop early: the best extraction has passed. If the shot is still very dark and slow at 35 seconds, something in the preparation (grind, dose, or tamp) needs adjustment.
Reading & Adjusting the Shot
Every shot tells you something. Extraction time and taste together point directly to which variable to change. Adjust one variable at a time — changing grind, dose, and tamp simultaneously makes it impossible to identify what fixed the shot.

Milk-Based Drinks
Lattes and cappuccinos require steamed milk textured to a specific consistency — microfoam: small, uniform bubbles integrated into the milk rather than a layer of large bubbles sitting on top. The technique uses a steam wand to introduce a small amount of air while spinning the milk in a controlled vortex.
On a single-boiler machine, pull the espresso shot first, then switch to steam mode and wait 30–60 seconds for the boiler to reach steam temperature. Submerge the steam wand tip just below the milk surface at an angle to create a circular spin. Introduce air briefly at the start — the milk should expand slightly — then submerge the tip deeper to heat and integrate. Remove the pitcher when the base feels hot to the touch (approximately 65°C / 150°F). Tap the pitcher firmly on the counter and swirl before pouring to pop any large bubbles and maintain a glossy, paint-like texture.
