How a Burr Grinder Works
A burr grinder routes whole beans between two abrasive surfaces — one stationary, one rotating. The gap between them determines particle size. Tighten the gap and you get finer grounds suited to espresso; open it and you get the coarser particles needed for French press or pour-over. Because every bean passes through the same gap, the resulting grounds are uniform in size. Water contacts each particle under similar conditions, and extraction proceeds predictably.
Burr grinders come in two main configurations: flat burrs and conical burrs. Flat burrs tend to produce a more bimodal distribution and are common in higher-end espresso-focused grinders. Conical burrs dominate the entry and mid-range. Both operate on the same principle and both produce results that are in a different category from blade grinding.
How a Blade Grinder Works
A blade grinder works like a small blender. A metal blade spins at high speed and chops beans into fragments — the size of those fragments depends on how long you run the machine, not on any adjustable gap. The result is a wide distribution: coarse chunks alongside medium pieces and fine powder, all in the same batch.
That distribution is the problem. Coarse particles under-extract because water moves through too quickly to pull all soluble compounds. Fine particles over-extract and contribute bitterness and astringency. Both effects appear simultaneously in the same shot or cup. There is no grind time that resolves this — the inconsistency is structural.

The longer brew time is more forgiving of particle variation. For espresso, there is no workable substitute for even particle distribution. For espresso, the answer is a burr grinder — and it is not close. Entry-level options start around $30 and produce results that are categorically different from a blade grinder at any price. The grinder determines particle size, and particle size determines extraction. No adjustment to dose, water temperature, or brew time compensates for inconsistent grounds.
For filter coffee on a strict budget, a blade grinder is workable — but the consistency gap is still present and noticeable. A burr grinder at $40–$50 is the better long-term investment regardless of brew method. If you are building an espresso setup, the grinder is not where to cut corners; it is the component that most directly determines what ends up in the cup.
