How to Grind Coffee Beans
Why Grind Size Matters
Coffee extraction is a function of surface area and contact time. Smaller particles expose more surface area to water, which extracts compounds faster. Larger particles expose less, which extracts more slowly. Every brew method is designed around a specific contact time — espresso runs for 25–30 seconds, pour-over drains in 3–4 minutes, French press steeps for 4 minutes. The grind size is calibrated to match: the particle size that produces the correct extraction speed for each method's contact time.
Get the grind wrong in either direction and the extraction becomes unbalanced. Too fine for the method produces over-extraction: bitter, harsh, astringent flavors from compounds that should have stayed in the grounds. Too coarse produces under-extraction: sour, thin, underdeveloped flavors from coffee that the water passed through before it could pull the right compounds. Grind size is adjustable and reversible — it is the fastest variable to change when diagnosing a cup that isn't tasting right.

Burr Grinders vs Blade Grinders
A burr grinder mills coffee between two abrasive surfaces — the burrs — set at a fixed gap. Beans pass through the gap and are crushed and sheared into particles that are all approximately the same size. The gap setting determines the grind size: narrow the gap for finer, widen it for coarser. A blade grinder uses a spinning blade to chop beans, producing a mix of fine dust and large chunks in the same batch.
Consistent particle size is the variable that makes controlled extraction possible. When particle sizes vary significantly, fine particles over-extract while coarse chunks under-extract simultaneously — the resulting cup contains both flavors at once and cannot be corrected by adjusting any single variable. Blade grinders cannot produce the consistency needed for espresso and produce noticeably inferior results for filter methods. A burr grinder is the baseline for any brew method where grind quality is a meaningful variable.
Conical vs flat burrs: Most home grinders use conical burrs, which are quieter, produce less heat, and are more forgiving of lower RPM motors. Flat burrs are common in commercial and prosumer grinders — they produce a narrower particle size distribution (more uniform) but require more precise calibration. For home espresso, conical burrs in the $100–$300 range cover the performance needed for consistent shots.
Dialing In for Espresso
Espresso grind adjustment is a calibration process — the goal is to find the grind setting that produces the correct extraction time for a given dose and yield. The standard starting point: 18g of ground coffee, targeting 36g of liquid espresso in 25–30 seconds. Everything else follows from that baseline.
Start at the manufacturer's recommended espresso setting on a new grinder. Pull a shot and observe two things: extraction time and taste. If the shot runs in under 20 seconds and tastes sour or thin, adjust one step finer. If it stalls or takes over 40 seconds and tastes bitter, adjust one step coarser. Pull two to three shots after each adjustment before evaluating — residual grounds from the previous setting clear the burrs slowly, especially on grinders with larger chutes.
Considerations
Grind fresh, every time. Ground coffee starts losing volatile aromatic compounds within minutes. CO2 — the gas responsible for crema and bright flavor notes — dissipates within hours of grinding. For espresso, grinding fresh is not a preference, it is a functional requirement. For filter methods, grinding the morning's dose in a sealed container is an acceptable compromise, but same-session grinding always produces a better result.
One variable at a time. When diagnosing extraction problems, adjust grind size first before touching dose, tamp pressure, or water temperature. Grind is the most impactful variable and the one most likely to be the root cause of off-flavors. Changing multiple variables simultaneously makes it impossible to identify what fixed the cup.
Bean freshness affects grind behavior. Freshly roasted beans (within 1–3 weeks of roast date) release CO2 during grinding, which can affect extraction timing slightly — shots may run faster than expected and dial in toward finer. Beans past 4–6 weeks post-roast lose CO2 and may extract faster, requiring a slightly finer grind to maintain the same shot time. Adjust the grind setting when switching to a new bag, even if it's the same bean and roast level.
