Where Espresso Sits on the Grind Spectrum
Grind size exists on a spectrum tied directly to brew time. Methods that steep coffee for a long time — French press, cold brew — use a coarse grind, because fewer, larger particles expose less surface area and slow extraction over that longer contact time. Methods with fast contact time — espresso — need the opposite: a fine grind with more exposed surface area, so meaningful extraction can happen in under 30 seconds.

Espresso's fine grind isn't a fixed target across grinders. Burr size, burr geometry, and even the age of the burrs all shift where "correct" falls on a given grinder's dial — which is why dialing in by result, not by number, is the only approach that transfers between machines.
Dialing In: Step by Step
Start with the grinder manufacturer's suggested espresso setting as a baseline — most espresso-specific grinders mark this range on the dial. From there, the process is a short feedback loop:
- Pull a shot and time it. Measure from the moment water first touches the puck to when the shot reaches your target yield (commonly 36g from an 18g dose, a 1:2 ratio).
- Read the result. Under 25 seconds means the grind is too coarse. Over 30–35 seconds, or a stalled shot, means it's too fine.
- Adjust one step. Move the grinder one increment in the needed direction — never more than one step at a time.
- Re-test. Pull two shots at the new setting before judging — the first shot after any adjustment often carries residual grounds from the old setting.
- Taste, not just time. A shot can land in the 25–30 second window and still taste off. Sour or thin points toward slightly finer; bitter or harsh points toward slightly coarser, even within the "correct" time range.
Change one variable at a time. If you adjust grind size, dose, and tamp pressure simultaneously, there's no way to know which change fixed — or broke — the shot. Isolate grind size first, since it has the largest single effect on extraction.

Why the Grinder Matters as Much as the Setting
No amount of careful dialing-in compensates for a grinder that can't hold a consistent particle size. Blade grinders chop unevenly regardless of setting, producing a mix of fine dust and large chunks that extract at completely different rates in the same shot — sour and bitter notes competing in one cup. A burr grinder, whether conical or flat, is what makes the entire dial-in process meaningful in the first place, since it's the only design that produces a narrow, repeatable particle size at a given setting.
