Why Tamping Matters
Tamping is the step between grinding and extraction: it compresses loose grounds in the portafilter basket into a single, dense puck. Water under 9 bars of pressure has to pass through that puck evenly for the shot to extract correctly. A puck with uneven density gives water an easy path through the loose areas and almost none through the dense ones — the result is channeling, where most of the water rushes through one spot while the rest of the coffee barely gets touched.
The force behind the tamp gets most of the attention, but it's rarely the actual problem. A puck can be tamped hard and still channel badly if the grounds were unevenly distributed beforehand. Tamping is compaction, not correction — it can only lock in the shape the grounds were already in.
Step 1 — Distribute First
Before the tamper touches the basket, the grounds need to be level and free of clumps. After dosing into the basket, give it a light tap on the counter to settle the coffee, then use a finger, a distribution tool (often called a WDT tool — a set of fine needles), or a few gentle swirls of the portafilter to break up clumps and spread the grounds evenly across the basket.
This step is where most channeling actually starts. A pile of grounds sitting higher on one side of the basket will still be higher after tamping — compression doesn't redistribute mass sideways, it just presses down. Get the bed level here, and the tamp has a real chance of producing a uniform puck.
Step 2 — The Tamp Itself
With the grounds distributed, place the tamper flat on the surface and check that it sits level before applying pressure — an off-angle tamper compresses one side more than the other. Press straight down with firm, even pressure. Roughly 30 lbs is the commonly cited reference, though few home baristas measure it precisely; what matters more is applying the same pressure shot after shot, not the exact number on a bathroom scale.
Hold the pressure briefly at the bottom of the press, then release. A light polish — rotating the tamper a few degrees while still pressed down — smooths the puck surface and reduces small edge cracks that can otherwise become channels. Lock the portafilter into the group head promptly afterward; letting a tamped puck sit exposed to air for too long can dry the surface before extraction starts.
Tamper fit matters as much as technique. A tamper that's slightly undersized for the basket compresses the center more than the edges, leaving a rim of loose grounds around the perimeter that channels every time. Match the tamper diameter to your basket size — usually 58mm for standard portafilters, 53mm for compact machines like the Breville Bambino line.

Most tamping problems trace back to the grounds bed, not the press itself. If a shot channels despite a firm, level tamp, the fix is usually earlier in the process — better distribution, not more force.
