How to Make a Cappuccino at Home
What You Need
- Espresso machine with a steam wand — the steam wand is what creates microfoam. Super-automatic machines with an integrated milk system can automate this; semi-automatics give you more control over the result.
- Burr grinder — consistent grind is the foundation of a quality espresso base. The espresso is 30% of the drink; weak or bitter espresso propagates through the entire cup.
- Milk frothing pitcher — a 12oz (350ml) stainless pitcher gives enough room to texture the milk without overflow and provides temperature feedback through the metal.
- Fresh whole milk — or a barista-formulated oat milk if you prefer non-dairy. Whole milk produces the most stable foam; fat and protein content drive microfoam quality.
- Espresso scale — optional but useful for consistent dose and yield on the espresso shot, which keeps the flavor baseline repeatable.
Step 1 — Pull the Espresso
Start with the espresso shot. A standard cappuccino is built on a double shot: 18g of ground coffee yielding approximately 36g of liquid espresso in 25–30 seconds. Grind fresh, dose evenly, tamp level, and extract. The espresso should show a reddish-brown crema with a honey-thick texture when it first flows — thin, pale flow indicates under-extraction and produces a weak, sour base.
Pour the double shot into your cappuccino cup immediately after extraction. Espresso degrades quickly once pulled — the crema oxidizes and the temperature drops. Have the milk ready to steam within 30 seconds of the shot completing.
Cup size matters: A traditional cappuccino cup holds 150–180ml. Using a larger cup forces you to add more milk to fill it, which shifts the ratio toward a latte and dilutes the espresso character. If you only have larger cups, reduce the milk volume rather than overfilling.
Step 2 — Steam the Milk
Pour cold milk into the frothing pitcher — approximately 120ml (4oz) for a traditional cappuccino. Cold milk gives you more working time before hitting the target temperature. Purge the steam wand briefly before submerging to clear any condensed water from the tip.
Submerge the steam wand tip just below the milk surface at a slight angle — roughly 1–2cm below, positioned off-center to encourage the milk to spin in a vortex. Open the steam valve fully. For the first 5–8 seconds, keep the tip near the surface to introduce air — you should hear a soft, rhythmic hissing sound. This is the aerating phase that creates the foam volume.
Once you have enough volume, submerge the tip deeper to heat and integrate the foam into the milk. Keep the vortex spinning by maintaining the off-center angle. The milk should continue circulating visibly until you reach temperature. Remove the pitcher when the base feels hot to the touch — around 60–65°C (140–150°F). Tap the pitcher firmly on the counter to break any large bubbles, then swirl briefly to achieve a glossy, uniform texture.
Step 3 — Combine and Pour
Hold the cup at a slight tilt and pour the steamed milk into the espresso in a controlled, steady stream. Start from a slightly elevated position to cut through the crema, then lower the pitcher as the cup fills to bring the foam to the surface. For a traditional cappuccino, finish with a defined layer of dry foam sitting above the rim — the foam should be dense enough to hold a light dusting of cocoa or cinnamon without sinking.
The pour does not need to produce latte art to be correct. Consistent microfoam texture and the right ratio are the technical targets. Latte art is a separate skill that develops with experience in milk texturing and pour control — it follows naturally once the foam quality is consistent.
Considerations
Milk temperature. The window of 60–65°C (140–150°F) is narrower than it feels when you're starting out. Below 55°C, the drink cools too quickly and the foam structure is weak. Above 70°C, milk proteins begin to break down and produce a scalded flavor. A thermometer clip on the pitcher removes the guesswork entirely during the learning phase.
Single-boiler timing. On a single-boiler machine, the machine cannot brew espresso and steam milk simultaneously — it needs to switch modes and reach a different temperature. Pull the espresso shot first, then switch to steam mode and wait for the machine to signal readiness (typically 30–60 seconds). Have the milk poured and ready before starting the shot so the transition is as quick as possible.
Foam consistency between attempts. If your foam is large-bubbled and dry rather than silky, the most common causes are: too much air introduced too late in the process, steam wand tip positioned too close to the surface for too long, or milk that was already at room temperature before starting. Start with cold milk every time and introduce air only in the first few seconds.
